Title: Crustless Potato Quiche

Yield: 6 Servings

5 Eggs, beaten
3cFrozen hash-brown potatoes from 26 oz pkg, thawed
4oz(1 cup) shredded cheddar
1/2cCottage cheese
1 Green onion, chopped
1/4tsSalt
1/8tsSeasoned pepper
  Dash hot pepper sauce
  Dash paprika
6slTurkey bacon, crisp&crumbled

Heat oven to 350F. Crease a 9 inch pie pan. In a large bowl, combine all ingredients except paprika and bacon. Mix well. Pour into greased pan, sprinkle with paprika.

Bake at 350F for 30-40 minutes or until set. Sprinkle with bacon, bake an additional 5 minutes. Let stand 5 minutes before serving
